2-3 bunches rainbow carrots, peeled
1/4 cup dark maple syrup
2 tablespoons extra virgin olive oil
2 sprigs fresh thyme
1 teaspoon kosher salt
Ground black pepper
Heat oven to 400F
1. Place the carrots on a baking sheet and drizzle with olive oil, salt, pepper and thyme leaves. Roast in the oven for 20 minutes.
2. Remove the pan from the oven, drizzle carrots with the maple syrup and turn them over so they are fully coated.
3. Return the pan to the oven and continue roasting for another 10-15 minutes until lightly browned and glazed.
4. Transfer the carrots to a serving plate, drizzle with the maple glaze and garnish with the carrot tops.
