Sun-Dried Tomatoes Spread


I love sun-dried tomatoes. I use them in a bunch of recipes, and I always keep them in my pantry (I buy them by the pound). This is one of these things that takes less than 5 minutes to make, and will upgrade the most basic sandwich or pasta. It's great to keep this recipe in hand around the holiday season, especially as an impressive hors d'oeuvre to put out with some cheese and crackers for unexpected guests. You can double up, fill it in a mason jar and give it as a gift.

Make sure your sun-dried tomatoes are moist. If they are very dry, rehydrate by soaking them in boiling water for 5 minutes, than squeeze out the access liquid.

Ingredients:

1 cup moist sun-dried tomatoes

1/2 cup extra virgin olive oil

1 clove garlic

Salt and pepper to taste

Preparation:

Place all the ingredients in a food processor, and process for 20 seconds on high speed. With a spatula scrape the sides and process another 10 seconds.

Store in the fridge in a glass jar, or air tight container up to a week.
