Keto Sunflower Bread


I stumbled upon this amazing recipe from Israeli chef Hilit Savir on instagram.

Hilit specializes in healthy, gluten-free cooking, and her GF bread recipes are easy, straight-forward, and most importantly, delicious!!


Since i've become gluten-free, about 6 years ago, I have tried countless bread recipes, many of which were pretty darn great, but usually required a long list of ingredients, and multiple steps. They are also not very diet friendly, especially if you're trying to cut down on your carbs, so when I found this keto bread recipe I was so excited and immediately had to give it a try!


The main ingredient in this bread is the ground sunflower seeds. You will need to grind them yourself. The sunflower seeds provide a nutty flavor, a coarse texture and great structure.

The psyllium husk is necessary for giving the bread its firm structure and a healthy dose of fiber! Psyllium husk can be found in the baking or health supplements isle.


After baking, let the bread cool completely. I like to slice mine immediately, store it in the freezer, grab a slice (or two) and throw it in the toaster!



Ingredients:

3 cups ground sunflower seeds (2.5 cups whole seeds)

1/2 cup coconut flour

1/2 cup ground flaxseed

1/3 cups ground psyllium husk

1 tsp baking powder

1 tsp salt

1.5 cups water

1 tbs apple cider vinegar (or white vinegar)

1 tbs olive oil


Preparation:

Heat oven to 400F (200c)

1. Place sunflower seeds in a food processor or a blender, and ground to a coarse mill.

2. Add ground sunflower seeds to a large bowl, add dry ingredients and mix well.

3. Add wet ingredients. Using your hand mix to combine and then lightly knead the dough in the bowl until the dough comes together (20-30 seconds). Shape to desired bread form - loaf or round, sprinkle more sunflower seeds on top.

4. Place bread in cast iron pan, or baking sheet lined with parchment paper. Bake 1 hour on 400F. Remove from oven and let cool completely before slicing.
