I first had this delicious soup at my fiancés mom's house and just loved it! It is surprisingly light and refreshing, and extremely simple to make. No wonder it's my fiancés favorite soup! I added zucchini to her original recipe and a squeeze of lemon juice for added flavor.
1 1/2 cup red lentils
4 carrots, peeled and grated
2 zucchinis, grated
5 cloves garlic, chopped
1/4 tsp red chili flakes
1 tsp cumin
2 tbs chicken soup powder or base
5 tbs chopped fresh dill
12 cups water
Salt and pepper to taste
1/2 lemon juice
1. In a large pot combine the lentils and water and bring to a boil. Reduce the heat and cook 5 minutes, skimming the foam repeatedly.
2. Add the garlic, carrots, zucchini, chili flakes, cumin and chicken soup powder and simmer for 20-25 minutes.
3. Add the dill, lemon juice, and season with salt and pepper to taste.
